Summer Herb Rice

 My kids love this rice I just whip up as a side during the summer.

Summer rice
1 cup plain cooked rice
1 tbsp olive oil
zest of a lemon
Lemon juice 
1 tbsp of herbs
Salt

Cook the rice, add additions once done, enjoy! 

For the herbs, I just grab whatever, throw in the food processor and store to make it more than once in a week.  Below are chives, garlic scapes, oregano, basil and parsley.
