A good friend over at http://simplefarmsteadcooking.blogspot.com/ posted these Pumpkin Cookies with Cream cheese frosting. While her cookies looked marvelous, I was wanting a little whoopie pie love. So that's what I did. I may still make her version, as they look just as good!
Pumpkin Whoopie Pies
Cookies (from here):
1 c. butter, softened
½ c. packed brown sugar
½ c. sugar
1 c. canned pumpkin
1 egg
1 t. vanilla
2 c. flour
1 t. baking soda
1 t. baking powder
1 t. cinnamon
1/2 tsp. nutmeg
½ t. salt
Preheat oven to 350 degrees.
In a large mixing bowl with an electric mixer or in the bowl of a stand
mixer, cream together the butter and sugars on low until combined then
on medium-high for about 2 minutes. Add the pumpkin, egg, and vanilla.
Mix well.
Add flour, baking soda, baking powder, cinnamon, nutmeg and salt. Mix just
until combined.
Drop onto cookie sheet by Tablespoonful. Bake 10-12 minutes, or until
centers look set. Remove to a cooling rack. Cool completely.
For the filling:
1/3 C. Shortening1/3 C. Butter
2 1/2 c. Confectionery Sugar
1/2 small jar of marshmallow fluff
Splash of milk
Whip it.

I have an unhealthy relationship with marshmallow fluff, so I don't buy it unless I need it for a recipe. But this is a win-win, because I can buy it because I need it for something, but there will still be a half jar left for me to eat with abandon.
