Pumpkin Whoopie Pies

A good friend over at http://simplefarmsteadcooking.blogspot.com/ posted these Pumpkin Cookies with Cream cheese frosting. While her cookies looked marvelous, I was wanting a little whoopie pie love.  So that's what I did.  I may still make her version, as they look just as good!

Pumpkin Whoopie Pies
Cookies (from here):

1 c. butter, softened
½ c. packed brown sugar
½ c. sugar
1 c. canned pumpkin
1 egg
1 t. vanilla
2 c. flour
1 t. baking soda
1 t. baking powder
1 t. cinnamon
1/2 tsp. nutmeg
½ t. salt

Preheat oven to 350 degrees.
In a large mixing bowl with an electric mixer or in the bowl of a stand mixer, cream together the butter and sugars on low until combined then on medium-high for about 2 minutes.  Add the pumpkin, egg, and vanilla.  Mix well.  Add flour, baking soda, baking powder, cinnamon, nutmeg and salt.  Mix just until combined.
Drop onto cookie sheet by Tablespoonful.  Bake 10-12 minutes, or until centers look set.  Remove to a cooling rack.  Cool completely.
For the filling:
  1/3 C. Shortening
1/3 C. Butter
2 1/2 c. Confectionery Sugar
1/2 small jar of marshmallow fluff
Splash of milk
Whip it.

  1. Your Pumpkin Whoopie Pies look so yummy!
    Greetings, RW & SK

  2. I have an unhealthy relationship with marshmallow fluff, so I don't buy it unless I need it for a recipe. But this is a win-win, because I can buy it because I need it for something, but there will still be a half jar left for me to eat with abandon.

  3. Woah, these look awesome! Your photos make me want to reach through the screen and grab one or two (or three...). Yummy!
