When asked what I should do with the plethora of pumpkins, I got some fab suggestions (THANK YOU!). One suggestion being my mom's recipe for Pumpkin cake brought to my attention by friends of my mom's. "My mom's recipe for pumpkin cake? She had a recipe? Do I even remember that? I must have had it! Where would I get it? Oh, the blue church cookbook? The one that's sitting on my shelf? Well, there it is!" And just like that, I had something I had to bake. It's been 18 years since I lost my mom, baking one of her recipes for the first time is pretty special.
You know what? It's delicious.
Pumpkin Chocolate Chip Cake
3 c flour
2 c sugar
2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1 c oil
4 eggs
16oz pumpkin puree
2 c chocolate chips
Dump. Mix Bake in greased bundt or 9x13 for 1 hour.
Cool.
If desired, frost with a drizzle. (Which I did with a bit of butter, confect. sugar, milk, vanilla whipped in a small bowl to make a topping).
Oh my that looks good. Love the instructions...;0D
ReplyDeleteLooks delicious! Adding this recipe to my "to be made" list.
ReplyDeleteJust mixed this up. I halved the recipe and put it in an 8x8 pan. What temp?
